Staring down my disgust: The Aesthetics of Eating Insects

I’m no Nicole Kidman, but I finally got around to posting my presentation on edible insects to the 23rd Symposium of Australian Gastronomy. You can see the actual face I made when I ate a whole cricket for the first time, listen to me grapple with the health and sustainability arguments around eating insects and get a little lesson from food history about how lobster went from disgusting to delicacy in the West.
